Homemade Simple

We had the most incredible, simple meal last night...one of those meals where the plates are scraped clean before it ever makes it to the sink. I love those kind! Both kids hate breakfast, but love breakfast food...figure that one out. So last night we had a meal of 'Puffy Oven Pancake', fried eggs and cooked blackberries.

The pancake was fabulous! It was more along the lines of a crepe than an actual inch-thick pancake, and topped with the blackberries, it was divine! What I loved about the pancake recipe was that you mixed it up and poured it into a hot skillet and popped it into the oven...one less thing to think about at dinnertime. When it puffed and browned up, you top it with fruit and serve warm with syrup, preserves or whipped cream. Unfortunately, that's the end of our blackberries, at least until summer. They sure were sweet and I can't wait to get out there and pick some more. And the eggs were a huge hit too...the yolks were so yellow, well, they were actually a shade of orange and so rich! You simply cannot make a more simple, hearty, rib-sticking meal than breakfast- and anytime of the day will do.
