I've started making these muffins on a semi-regular basis here at the Run for three reasons:
1) They're chocolatey and sweet, so noone thinks they're healthy
2) There's plenty enough fiber in them to get anyone going.
3) Even folks who don't like breakfast can't refuse a cupcake : )
So here you go. Some folks might call them chocolate-chocolate chip, I call them "Make 'Em Go".
1 c. wheat flour
1 c. white flour
1/2 c. dark cocoa
1 1/2 c. white sugar
1/2 t. baking soda
2 t. baking powder
1/4 t. salt
1/3-1/2 c. wheat bran
1 1/4 c. milk
2 eggs
2 T vegetable oil
1/4 c. sour cream (or applesauce, pumpkin puree, etc.)
1 t. vanilla
3/4 c. chocolate chips
Preheat oven to 350 degrees. Grease muffin cups or line with paper liners.
In a large bowl, combine all the dry ingredients. In a smaller bowl, combine eggs, milk, vanilla, oil, and sour cream. Mix into dry ingredients and stir well. Fold in chocolate chips. Fill muffin cups 2/3 full and if desired, sprinkle tops with raw sugar. Bake until center is set and cool on a cookie rack. Mini muffins take approximately 9 minutes.
