Winter Pesto

All this sprouting basil has me craving pesto in the worst way. I usually make up a huge batch at the end of the season and freeze it in ice cube trays for perfect sized portions. Unfortunately, pesto wasn't high up on my priority list last summer, so there's no homegrown, homemade pesto left. And since it's a pesto emergency, I'm going for the next closest thing...winter pesto!

It's so easy...you just take a bag of fresh spinach leaves, a goodly amount of dried basil, garlic, Parmesan cheese, pine nuts and olive oil...blend it up really well in the blender or food processor and you've got it! Winter pesto! Admittedly, it's not quite as good as the real thing; nothing is as good as the real thing, but this comes dang close, especially for the middle of winter.

Want to know another secret??? Pesto makes the best grilled cheese sandwiches ever! Just butter your bread, add your slice of cheese, a slice of tomato, slather on some pesto and grill. Oh my gracious, it is so good! Add a side of fries and a homemade pickle...who can say no to a meal like that?
